Ingredients
1 can full-fat coconut milk (400mL)
½ cup crushed strawberries (5-6 large berries)
¼ cup sugar
1 tsp vanilla
Pinch of salt
Instructions
Combine coconut milk and crushed strawberries and whisk together until smooth.
Add sugar, vanilla, salt, and whisk again until combined.
Pour into an ice cube tray and freeze overnight.
The next day, transfer frozen cubes to a high-powered blender or food process, and mix for 1-2 minutes. Mixture will go from large chunks to small shavings, and eventually will become smooth.
You can enjoy immediately or return to the freezer for a few hours to allow it to harden more.
This is best enjoyed the day-of but can be eaten for several days after as well, it will just need time to thaw before it is scoop-able
